It’s about that time. Time to butter up your loved ones! If you’re attempting to make your honey some home-cooked perfection on Valentine’s Day, we have some ideas for you. Totally legit ideas too because they come from Caesars Entertainment Atlantic City professional chefs. Check out these awesome options!

You need to straight up wet your appetite before you dig in, right? There’s no better way to do that than some fancy Valentine’s Day themed cocktails that are both impressive and delicious. Check out these from 12 Bar at Showboat Atlantic City.

These drink specials will be offered at 12 Bar, Spirit Bar, Crossroads at House Of Blues, and Scarduzio’s Steak & Sushi at Showboat, Lobby Bar and Preview Bar at Bally’s Atlantic City, and Mia, Toga and Atlantic Grill at Caesars Atlantic City.

 

Appetizer 

What about something easy that only takes about 15 minutes after some easy preparations, but seems like you were totally slaving in the kitchen? Sounds like a no-brainer to us! Chef Maurizio De Marco from Arturo’s at Bally’s Atlantic City hooked us up with an amazing Veal Carpaccio recipe.

Arturos

Carpaccio di Vitello

  • 12oz      Thin Slice Veal Loin
  • 2oz        Golden Raisin
  • 2oz        Dry Fig
  • 2oz        Slice Almonds
  • 2oz        Apricot
  • 1 Tbsp.  Honey
  • 1  all       Lemon Juice
  • 2 Tbsp.   Brandy
  • 2 Tbsp.   Evo
  • Salt & Pepper

 

Preparation:

For 4 persons Place raisins with cognac to macerate for at least an hour.  Place the carpaccio slices on a serving platter. In a bowl combine the oil, lemon juice, honey, salt and pepper.  Seasoned with this emulsion the carpaccio and decorate to your liking with dried fruit.  Served on top the veal carpaccio with dried fruit.

 

Main Course 

Valentine’s Day is a sexy holiday so spice things up in that kitchen! Literally. The kind folks at Dos Caminos at Harrah’s Resort Atlantic City have supplied us with an amazing Pastor Marinated Chicken recipe that can be used in tamales, empanadas, quesadillas, tacos, sopes and enchilladas. Like these.

Dos Caminos

Pick your preference and get to it!

Pastor Marinated Chicken

4 pounds chicken legs and thighs

 

Pastor marinade

3 ancho chiles

3 guajillo chiles

½ cup Ancho chile powder can be substituted for chiles mixed with 2 cups warm water

1 medium onion, quartered

4 cloves garlic

4 bay leaves

½ cup cider vinegar (red wine or white wine vinegars work well also)

1 teaspoon gound cumin

½ teaspoon ground clove

1 teaspoon ground black pepper

½ teaspoon ground allspice

½ teaspoon ground cinnamon

1 teaspoon thyme chopped

1 teaspoon oregano preferably Mexican

2 cups water

 

To prepare marinade

Remove stems and seeds from chiles, place them in a small sauce pan and cover with water, bring to as simmer, let cool.  Remove chiles from liquid  and place in a blender with all other ingredients and puree until smooth.

 

For chicken

Season chicken legs and thighs with salt and pepper and toss them with the pastor marinade and place them in a large baking dish, cover with a lid or aluminum foil and bake at 350 degrees for 45 minutes to 1 hour.  Cook until meat is tender and pulls easily away from the bone.  Shred meat and toss with remaining cooking liquid.  Reserve meat for empanada and tamale recipes.

 

Dessert

Dessert is a very anticipated part of the Valentine’s Day meal, no? Whether you give yourself a free pass for chocolate this day, or this last course acts as a symbol of post-meal activities, dessert is so important! And chocolate is a must. Chef John Mejlak from Nero’s Tuscan Steakhouse at Caesars Atlantic City slipped us the recipe for the incredible Chocolate Peanut Butter Mousse Cake.

Ingredients

  • 1/2 cup butter
  • 2 ounces unsweetened chocolate
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 package (10-1/2 ounces) miniature marshmallows, divided
  • GLAZE:
  • 1/2 cup sugar
  • 2 tablespoons milk
  • 2 tablespoons butter
  • 1/4 cup semisweet chocolate chips

Directions

  • In a microwave, melt butter and chocolate; stir until smooth. Cool for 10 minutes. Combine the flour, baking powder, baking soda and salt; set aside. In a large bowl, beat the eggs, sugar, applesauce and vanilla. Stir in chocolate mixture. Gradually add dry ingredients and mix well.
  • Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 20-30 minutes or until a toothpick inserted near the center comes out clean.
  • Set aside 1/2 cup marshmallows for glaze. Sprinkle remaining marshmallows over cake. Return to the oven for 2 minutes or until marshmallows are softened.
  • In a small saucepan, combine the sugar, milk and butter. Bring to a boil; boil for 1-1/2 minutes. Remove from the heat; stir in chocolate chips and reserved marshmallows until melted. Quickly drizzle over the cake (glaze will harden as it cools). Yield: 12-16 serving
