It’s hard to believe that the 2013 Atlantic City Food And Wine Festival is coming up next week! Everyone’s favorite time of year, right?! Celeb chef Rocco Dispirito who shot to fame on Bravo’s Top Chef and then later on with Rocco’s Dinner Party will be part of the festivities for the first time ever! The “Now Eat This” guru will start it off right with all you attendees at the Kick Off Party at The Pool After Dark at Harrah’s Resort Atlantic City on Thursday, July 25th and then will conduct a Chefs In Kitchen event at Casa Di Napoli at Showboat Atlantic City on Saturday, July 27th and attend the new and highly anticipated Beach Soiree that evening on the Caesars Atlantic City beach.

We got the chance to speak with Rocco about Atlantic City Food And Wine, his culinary journey and more! Check it out, below.

TAC: What can fans expect from your Chefs In Kitchen event on July 27th?

Rocco Dispirito: They should expect and count on having a lot of fun. Sure, they will learn how to cook but not without lots of laughs. Come cocktail in hand!

TAC: Sounds good to us! You have said many times that cooking saved you and cooking changed your life. How specifically, and how did you discover that this is something you were extremely passionate about?

Rocco Dispirito: When I was growing up in Jamaica, Queens I watched many of my friends and neighbors get tempted by drugs and crime. I believe to this day that had I not started working in the restaurant business and fall in love with cooking at 11 years old, my life may have taken a different direction.

TAC: What did you hope to do with your career after graduating from culinary school? Did you ever think you would become a kind of spokesperson for healthy living?

Rocco Dispirito: Ha! NEVER! I spent most of my career trying to figure out how to emulsify the maximum amount of butter, bacon fat and foie gras fat into my dishes.  Little did I know I was headed for a wake up call in my mid thirties. When your doctor tells you ‘I crunched the numbers and things don’t look good’, its time for a major change.  And frankly diet and exercise sounded a lot better than taking three medications for high cholesterol, high blood pressure, etc.

TAC: Most definitely. Have you seen any progress in our country in regards to Americans living healthier lifestyles since starting your NOW EAT THIS endeavors?

R0cco Dispirito: Yes, as a mater of fact I have. While we continue to be the world champs in obesity, a lot of people have joined the conversations including other well-known chefs.  Before Now Eat This, this was not a prestigious enough topic for the country’s greatest chefs.

TAC: What is one of your favorite NOW EAT THIS recipes?

Rocco Dispirito: My fried chicken. I really beat the system with that dish. Maybe I’ll make it in Atlantic City this summer.

TAC: Healthy fried chicken, whaaaat? We’re intrigued. Do you have any tips on maintaining weight loss after the Now Eat This Diet?

Rocco Dispirito: It’s really simple. Burn as many calories as you consume. The Now Eat This diet is designed to make that process delicious.

TAC: We like the sound of that. What is your favorite “Cheat Day” kind of meal?

Rocco Dispirito: Pizza by the slice! The kind that has red fat dripping off of it.

TAC: And…we also like the sound of that. What are you most proud of so far in your career?

Rocco Dispirito: That I’ve helped thousands of people lose weight and get healthy, including many documented cases of 100 lbs. or more of weight loss. Being a chef is amazing. You get to make a night of life special and exciting. With what I do now, I get to do that and extend the amount of nights my guests live.

TAC: What is something you still hope to accomplish in your career?

Rocco Dispirito: I truly believe we are on a path to a major shift in philosophy on eating in America. I hope to continue to be a top voice as it happens.  In ten years, 1 in 4 children will be obese in America. I am hoping that ten years from now, I will be able to say I helped change that.
