Behold the grilled cheese. It is, perhaps, America’s greatest invention. Was it even invented here? No matter, we’re taking credit for it. That’s how much we love it! Bread, cheese and, if you’re a fancy-pants, maybe a few other add-ons. But even in its most complex form, it’s still simple. And beautiful. And delicious.

We scoured Las Vegas to find the tastiest, cheesiest, grilled-iest grilled cheeses out there. Here are some of our favorites.

1. Short Rib Grilled Cheese at Hell’s Kitchen

Sharp white cheddar cheese melts inside of crusty sourdough bread. Pull-apart braised short rib gives the middle some real girth and will please omnivores looking for a meat-laden take on the classic sandwich. Caramelized onions tie everything together with some cooked-down sweetness. At Hell’s Kitchen at Caesars Palace, this high-end version of the classic sandwich is a lunchtime favorite.

2. Grilled Cheese Sandwich at In ‘n’ Out Burger

Here’s the thing. In ‘N’ Out Burger can do no wrong. We love everything they offer. The burgers, the shakes, even the controversial fries, which, by the by, go wonderfully as a crunch component (order them well-done) in the middle of this burger chain’s grilled cheese sandwich.

This iteration is basically what comes on their burger but without the meat. So you get the cheese, the bun, the lettuce, the tomato and spread and the onions. Order it animal style for grilled onions and secret sauce. We’re not sure why it tastes so good other than the fact that it comes from In ‘N’ Out. 3. Grilled Bacon Mac ‘N Cheese At Burger Brasserie

Can a sandwich really be a grilled cheese if the cheese isn’t its own component? This is a question humanity has been struggling with since the birth of people themselves. We say yes because of this creation at Burger Brasserie inside Paris Las Vegas Hotel & Casino. Cheese is versatile and can be the star of the show even if it’s not the main ingredient. There is a trio of cheeses here – mozzarella, cheddar and gruyere – making up the cheese part of the macaroni and cheese. It melds seamlessly with bold Applewood bacon. The whole thing sits on a Pullman loaf – one of the great sandwich breads out there – which is Parmesan crusted, allotting for even more cheesiness.

4. Grilled Macaroni & Cheese At Café Hollywood

Once again, pasta is used as a vessel to showcase the cheese component, a saucy mistress comprised of cheddar, American, Swiss, Parmesan and mozzarella cheeses. It’s carbs on carbs at Cafe Hollywood at Planet Hollywood Las Vegas Resort & Casino as the mac is contained by two thick slices of challah bread. Chorizo is the wild card that takes this thing to a different dimension, giving a welcomed spice to the sandwich. Finally, roasted red peppers give some much-needed balance to this monstrously tasty beast.

5. Grilled Cheese Panini at Giada

Leave it to the queen of Cal-Italian, Giada De Laurentiis, to freshen up the everyday grilled cheese. At GIADA inside The Cromwell, she shows both respect to the original and some modern flair with her version. By panini pressing the entire thing, she adds extra crunch to the bread and melds flavors by sealing them all together.

Heirloom tomatoes are a nice upgrade to a grilled cheese tomato slice, making it more modern and giving bursts of juiciness throughout. Lemon pesto adds color, acid and texture. If you’re up for it, throw in some prosciutto di parma for some extra saltiness and richness. It’s a winner no matter what.
