It appears construction is nearing completion at the new restaurant offering at Rio Las Vegas, KJ Dim Sum & Seafood Chinese Restaurant.

We couldn’t resist the urge to stop by and stick our head in for a peek at the work-in-progress. We’re happy to report it’s an eye-pleaser.

Digging the ceiling. It's groovy.

Note the carpeting. Today’s thing you may not have known, because this blog certainly didn’t: In Chinese culture, two butterflies flying together symbolize love.

Our new friends at KJ said they’re hoping to open on or about Jan. 18, just in time for the Lunar New Year which begins Jan. 23, 2012.

It’s the Year of the Dragon, and there’s even a special Total Rewards loyalty program card to commemorate it. Take a look.

We're getting hungry.

KJ Dim Sum & Seafood Chinese Restaurant is a sister restaurant to a popular Vegas establishment, KJ Kitchen, known for its chefs trained in the tradition of authentic Chinese cuisine. Read more.

The new restaurant’s head chef is Loy Lee, who lead the culinary team at KJ Kitchen for more than five years. He was born and raised in China and learned his craft in Hong Kong. Chef Lee will now relocate to Rio, joined by a 30-year veteran of Chinese cuisine, Chef Pui Wong, who also worked in China and Hong Kong.

A nice fellow on-site said this is an authentic Chinese doorway. Each real-wood beam weighs hundreds of pounds.

KJ Chinese restaurant is located across from the Rio’s famed buffet, occupying the space formerly inhabited by the hotel’s bowling center.

We popped our head into the space next to KJ, and it looks like it has the potential to be another something. Note: We are a Las Vegas blog, not a prognosticator.

Please make it a bar. Please make it a bar.

Always exciting to see a new Sin City restaurant opening its doors. We’re ready to get a taste of KJ Chinese at Rio!
