So are you ready for the most exciting food fight Vegas has ever seen? Anne Burrell Vegas Chef Prizefight, Food Network’s newest show, has seven elite chefs fighting to become the head chef for the new Bugsy & Meyer’s Steakhouse at Flamingo Las Vegas. This week’s food challenge: Mexican cuisine at Guy Fieri’s El Burro Borracho.

Hosted by Food Network star Anne Burrell, this week’s episode takes you to Guy Fieri’s El Burro Borracho, located inside Rio All-Suite Hotel & Casino. In episode 2, Burrell pushes the seven remaining chefs to the limit with a challenge to create a dish using the nopal cactus.

All must create Mexican dishes worthy of dinner service at Guy Fieri’s El Burro Borracho. Leadership and quick thinking become critical when organization and communication fall apart (dun, dun, DUN!).

El Burro Borracho is an off-Strip favorite, for both locals and tourists alike. You’ll get awesome views of the hotel’s gorgeous tropical-inspired pool, all while enjoying flavorful Mexican dishes. The Trash Can Nachos are a hit because the cheese is spread evenly on every chip – a rarity with these types of munchies. But this Las Vegas restaurant is more than just nachos and tacos — you can also enjoy house-made churros, signature margaritas and all-you-can-eat specials. This popular Vegas restaurant can also accommodate vegans and vegetarians. Indulge in the mango and jicama crunch salad (swap the honey vinaigrette for olive oil, lime and spices if vegan) and the Verdura Asada tacos, which come with grilled zucchini, corn, roasted poblano peppers, salsa, tomato, cilantro rice and black beans. Veggie or not, these bites will make your taste buds sing.
