One of many things that Vegas is good at? Change. The Las Vegas Strip has a way of consistently changing up restaurants, nightclubs and experiences to keep life fresh for the 40 million visitors who pass through every year. 2015 is no exception.

Here’s a look at five new things to do in Vegas.

Bally’s Grand Bazaar

Las Vegas’ newest shopping venue comes your way next month. The Grand Bazaar Shops in front of Bally’s Las Vegas promises to combine the best of the world’s open-air markets. Look for more than 150 stores  including cosmetics company Lush, rockabilly fashions from Bettie Page, vintage Americana looks from Superdry, and jewelry and watches from Alex & Ani, Swarovski and Swatch. Get your flair bartending needs fulfilled at Flair Bar, and fill your stomach with dishes from Jimmy’s Seaside Fries and San Francisco’s ramen bar Katana-Ya. Afterward, you’ll want to visit the Nazar Turkish Ice Cream to try to grab your cone from one of the tricksters working the booth.

Every night will feel like New Year’s Eve with the Swarovski Crystal Starburst overhead. The 14-foot starburst is made up of 924 custom-cut Swarovski crystal spheres and more than 1,800 points of light. Light shows in LED will brighten up the sky with this newest icon of the Strip.

Ready to check out the 55,000-square-foot retail haven? It opens Feb. 26.

Searsucker

After opening Searsucker locations in Austin and San Diego, Chef Brian Malarkey is headed for the Vegas Strip.

Chef Brian Malarkey made his name on “Top Chef” and then “The Taste,” but it’s his restaurants that really make him shine. Enter Searsucker, his dining mecca out of San Diego that’s coming to Caesars Palace this Spring. Malarkey plans a dinner menu filled with his take on American classic comfort foods, all served in a laid-back atmosphere.

Already Malarkey has laid out the menu with dishes such as the 38-ounce bone-in ribeye “tomahawk,” eggs + bacon “pork belly” featuring a soft poached egg with brown butter Hollandaise, as well as the beer-braised short rib + horseradish + fried onions with pan sauce and butter potato. Look for side dishes such as jalepeño-chorizo “corn off the cob” and fried brussels + walnuts with anchovy red wine jalapeño vinaigrette. With its location next to Omnia (we’ll get to that in a sec), Malarkey is bringing a “dinner meets brunch” menu to late night.

Malarkey is big on cocktails, and his Peter Rabbit — a spin on the Pimm’s Cup — is deigned a favorite of fans. Even here he takes chances with the Jalaberry Strawpeño margarita and the New World Fashioned, a variation on the Old Fashioned.

Designer Thomas Schoos is having his way with the look of the 7,500-square-foot venue, where retro Americana meets mid-century roadside diners. Coarse rope chandeliers that look like lassos, neon “Eat” signs, tumbleweed-shaped light fixtures and rustic wood and marble tables are just some of the charming touches.

Ready to dine here? It opens sometime in March.

Omnia Nightclub

Omnia Nightclub will add a sizzling nightlife element to Caesars Palace this Spring.

It’s a new nightlife venue for Caesars Palace. Omnia, the 75,000-square-foot nightclub, takes over the always popular Pure Nightclub space with so many different venues inside, you’ll never get tired of partying here. The prestigious Rockwell Group is creating a seductive ultra-lounge, a high-energy main room and mezzanine, as well as a breathtaking rooftop garden with panoramic views of the Las Vegas Strip. Interactive features and luxurious finishes are around every corner.

Hakkasan Group is behind this new venue that plans to showcase a classic design with state-of-the-art, modern technology.

Ready to party here? It opens this spring.

Mariah Carey

Mariah Carey opens at Caesars Palace Las Vegas on May 6.

A residency at The Colosseum at Caesars Palace signifies you’re a true icon. Cher, Bette Midler and Shania Twain all took their turns there. Elton John, Rod Stewart and Celine Dion already have them. Reba and Brooks & Dunn land theirs this summer. So it’s no surprise that chanteuse Mariah Carey will perform 18 of her biggest hits in “MARIAH CAREY #1’s.” Her over-the-top production launches in May with nine dates, plus nine more in July.

“Vision of Love,” “Hero,” “Fantasy,” “We Belong Together” and “Touch My Body” are just some of her No. 1 hits on the Billboard Hot 100 that will be part of the show.

Ready to hear this iconic songbird? Her first show is May 6.

Reba, Brooks & Dunn

Reba, Brooks & Dunn hit Vegas June 17.

A trifecta of prime country talent arrives at Caesars Palace when “Reba, Brooks & Dunn: Together In Vegas” opens in June at The Colossum. The iconic Reba McEntire joins forces with best-selling duo Brooks & Dunn for what’s sure to be an unforgettable stage show. So far, they’ve announced June, July and December dates for what will be The Colosseum’s first resident duo.

Ready to get your country on? The show kicks off June 17, 2015.
