Back For Seconds: Giada De Laurentiis Opens a Second Vegas Eatery

Pronto by Giada is exactly as it sounds—a fast, casual Italian restaurant. From pastries to panini, gelati and sorbetti, the Caesars Palace restaurant is a welcoming spot to grab a quick bite. “I want guests to feel relaxed and at home,” De Laurentiis explains. “The space is warm, comforting and inviting.”

How does Pronto differ from your first restaurant, GIADA at The Cromwell?

Pronto has the same Italian cuisine with a California twist that I am known for, but in casual surroundings. Panini, soups and salads—all with a focus on fresh ingredients. Perfect for a bite on the run or leisurely aperitivo.

What are some signature tastes at Pronto?

My lemon grilled cheese is a perfect sandwich to go with pomodoro and meatball soup. Comforting, while light and familiar. Of course my lemon ricotta cookies make an appearance. They’re perfect to eat on the go or to sit and savor with a specialty cappuccino.

Explain how your gourmet grilled cheese sandwiches and lobster roll have a Giada twist.

I offer two grilled cheeses. One is like a caprese—loaded with mozzarella cheese, tomatoes, basil and arugula. Then the grilled cheese with lemon and basil. My lobster roll is piled high with lobster meat tossed in a citrus dressing packed full of celery leaves and herbs for a fresh pop of flavor, all finished with crispy capers for a surprise in every bite.
