How do you prepare your favorite spring ingredients? I love fresh peas! They are like nature’s candy. For spring, we like to do a simple side dish with peas, prosecco and pancetta. Top it with a pillow of pecorino, and it’s sure to make your stomach smile.

What two dishes on your menu feel most like spring? Dishes with berries, peas and so much more. You might just have to come in and find a couple new favorites for yourself.

Tell us about your Seafood Tower?  It’s packed with fresh seafood from crab legs and oyster crudo to a Giada-fied shrimp cocktail. I love being able to showcase different sauces for specific oysters. We feature a lot of citrus to bring out the light, refreshing side of things.

Any secrets to cooking healthy at home? Fresh herbs are a great way to punch up flavor without additional fats. I also feel acids are underrated. Just a squeeze of fresh lemon juice can really bring out the flavors of any ordinary dish. Always remember to keep things simple. Produce is so wonderful in spring and summer it doesn’t need much more than a sprinkle of salt and a drizzle of extra-virgin olive oil.

What are some key foods to include for a healthy diet? Think good fats like almonds, avocado and extra-virgin olive oil. These leave you satisfied, but not weighed down.
